Brasserie Launches Special Menu to Promote Sustainable Seafood

Authentic French bistro at The Parisian Macao celebrates
'World Oceans Day' with delectable dinner set menu


(Macao, Jun. 5, 2023) – To celebrate World Oceans Day on June 8, The Parisian Macao's authentic French bistro Brasserie is launching a thoughtfully curated dinner menu from June 6 to 16, all featuring sustainable and responsibly sourced seafood.

The World Oceans Day special menu was initiated by the Hong Kong Sustainable Seafood Coalition, with the participation of leading restaurants and supermarkets in Hong Kong and Macao. The aim of the campaign is to minimise the burden of seafood demand on the environment and advance the sustainable seafood market in Hong Kong and Macao through good sourcing practice. Gourmands can savour an environmentally friendly seafood feast at Brasserie while gaining a greater understanding of the importance of safeguarding our oceans so that delicacies from the sea can be enjoyed by future generations.

To celebrate this year's World Oceans Day, our chefs at Brasserie have prepared a delicious seafood gourmet dinner menu using sustainable and traceable seafood which reflects and shares with guests our strong commitment to marine conservation and dissemination of good sourcing practices."

Located at The Parisian Macao, Brasserie is the place for an authentic French experience, from food to ambience. The four-course World Oceans Day special dinner menu curated by Executive French Chef, Daniel Brolese creates a sea-to-table dining experience for guests. The amuse-bouche, Tartare de la Mer, features Scottish smoked salmon, Canadian scallop and avocado tartare with orange vinaigrette. For appetiser, guests will enjoy grilled Abrolhos octopus with heirloom tomatoes, kalamata olives, bell pepper and feta cheese salad. After shrimp flambé in tomato gin soup with smoked herring tartine, the main course of Atlantic sea bass fillet in herbs and hazelnut crust, green pea mousseline and caper beurre blanc composes a mosaic of sublime flavours. Finally, the ocean-themed gourmet journey finishes with a refreshing peach floating island with raspberry and almond tuiles. The dinner menu is priced at MOP 688* per person and available from June 6 to 16.
