Sustainable Seafood Dishes to Support World Ocean Day

(Macao, Jun. 7, 2024) –  In celebration of World Ocean Day on June 8, Sands® Resorts Macao and Sands Macao are presenting specially curated sustainable seafood dishes at three signature restaurants, available until June 16. The Parisian Macao's Brasserie, The Londoner® Macao's Gordon Ramsay Pub & Grill and Sands® Macao's Copa Steakhouse, will each present creations that will delight gourmands and highlight the importance of safeguarding our oceans.

Tom Connolly, Senior Vice President of Food and Beverage Operations at Sands China Ltd. said, "Sustainable seafood is more than just ensuring that our marine ecosystems are properly protected. Supporting a sustainable seafood industry means purchasing environmentally responsible seafood by following best-practice guidelines for sustainable seafood. This helps to reduce the pressure on our threatened marine resources. A greater understanding of seafood products and where they come from enables Sands China to better understand its seafood supply and to take action to improve the long-term sustainability of its seafood procurement stream."

Each restaurant has created delectable dishes using certified sustainable seafood from premium suppliers. French bistro, Brasserie, brings the flavour of the sea to the table with two superb dishes, Grilled Abrolhos octopus with heirloom tomatoes and Atlantic Sea bass fillet in herbs and hazelnut crust. Authentic British gastropub and steakhouse Gordon Ramsay Pub & Grill is reimagining the national favourite Fish and chips with tartare sauce and mushy peas, while Copa Steakhouse is presenting an elegant dish of Chilean codfish, black mussel, braised garden vegetables, canellini beans and vermouth emulsion.
