The Venetian® Macao
Executive Chef Darren Cheung at the newly opened premium Cantonese restaurant, Pin Yue Xuan, presents refreshing and delicious dishes, perfect to invigorate health and vitality in spring. In an elegant Chinese courtyard-style space, guests can savour innovative floral delicacies, including marinated foie gras with pear and Osmanthus; double-boiled sea conch soup with sea cucumber and dendrobium flowers; and flower sorbet.
At Hiro by Hiroshi Kagata, Executive Chef Hiroshi Kagata presents Sakura Omakase menu, providing an authentic gastronomic experience through the celebrated style of an upscale Japanese eatery. Sakura Omakase is priced at MOP 1,688* per person, incorporating cherry blossoms into a range of signature tempura, teppanyaki, sushi, sashimi and desserts.
Featuring the culinary delights of Shanghai, Jiangsu and Zhejiang, Jiang Nan by Jereme Leung offers a variety of seasonal dishes, bringing the spring flavours of Jiangnan to Macao. Signature dishes include spring bamboo shoots filled with Jiangnan shellfish and glutinous rice; deep-fried lobster and Chinese toon tofu dumplings; and sakura shrimp, crunchy celery salad topped with bonito.
The Londoner Macao
At The Huaiyang Garden helmed by 'Godfather of Huaiyang Cuisine' Zhou Xiaoyan, guests can savour the flavours of Huaiyang dishes and be transported to the birthplace of the timeless cuisine with each bite. Here, traditional flavours are celebrated and elevated with contemporary artistic presentation. Spring specials include steamed Lake Tai white fish, river shrimp and whitebait with Bi Luo Chun tea sauce; marinated morel mushrooms and tomato with sakura jelly; and peach gum, peach blossom and water chestnut soup with rose flower cake.
North Palace invites diners on a delicious gourmet adventure across northern China, with healthy seasonal dishes such as poached pear with hawthorn juice and water chestnut; deep-fried crispy chrysanthemum with scallops in garlic sauce; and deep-fried crispy shrimp with crab meat and sugar Osmanthus sauce.
British-inspired restaurant Churchill's Table launches 'Macao in Bloom Tea Set', celebrating spring with a selection of floral-themed sweet and savoury bites, including spiced foie gras flower pot with apricot chutney and dark chocolate sandwiches; spring butterfly and honey bee pastries. The tea set is priced at MOP 298* for two persons, available from 3 p.m. to 5:30 p.m. Monday to Thursday. Guests can also order a la carte spring specials: lightly cured Hokkaido scallops, with pickled radish, yuzu gel, melon vinaigrette with orange blossom and dill creating a harmony of tastes; and The English Rose, made with raspberries glazed with amaretto and rose jelly with almond ice cream, leaving a mouthful of refreshing sweetness.
The Parisian Macao
Specialising in premium Cantonese cuisine, La Chine offers a wide range of floral-themed dishes. Guests can savour a sumptuous feast for the eyes and the palate this springtime. Not-to-miss dishes include tossed kalimeris indica salad with Hokkaido sea urchin tartlet; stir-fried scallop and mini cucumber flower with X.O. sauce; and chilled roselle and Osmanthus jelly.
Lotus Palace is home to a myriad of exquisitely presented Chinese dishes from across the country. Incorporating an array of edible flowers, the spring specials include chilled Canadian lobster and grapefruit with roselle dressing; pan-fried Hokkaido scallops with butterfly peas and passion fruit dressing; and chilled coconut milk pudding with rose and dendrobium flowers, baked rose and winter melon pastry.
Sands Macao
Featuring freshest ingredients prepared with traditional Cantonese cooking techniques, Golden Court creates a spectacular floral feast, with dishes either served with flowers or shaped like flowers. Highlights include crispy mandarin fish with sweet and sour sauce; crispy fried chicken with almond and prawn puree; and spicy vegetable soup with porcini and enoki mushroom.
